Summer Chicken Kebabs

Ingredients (Serves 2-4 people)

  • 2 chicken breasts
  • 1 green pepper
  • 1 yellow pepper
  • 1 red pepper
  • 1 onion
  • 1 cup whole mushrooms
  • garlic, herbs & spices of your choice
  • 1 lemon
  • olive oil


Cut chicken into cubes. They should be the similar in size so the item will cook evenly.

Marinate for an hour in some olive oil and lemon juice. You may flavour with garlic, herbs or spices.

Wash and cut vegetables in to pieces, keep mushrooms whole. Marinate for one hour in olive oil, and seasoning to taste.

If you are using wooden skewers soak in water for an hour so they do not burn on the grill.

Skewer ingredients alternating chicken and vegetables. Start with a pepper. Grill skewers for about 10-15 minutes rotating every few minutes.

Tip:  Cook a few on the grill and keep in the refrigerator for lunch the next day.
