Almond Yoghurt Flapjacks


You need a waffle pan or iron for this.

  • 500ml ground almonds
  • Pinch of salt
  • 2,5ml (½ tsp) baking powder
  • 2,5ml (½ tsp) ground cinnamon
  • 4 eggs
  • 10ml (2 tsp) xylitol
  • 125ml (½ cup) plain yoghurt
  • Melted butter for frying


  1. Mix all the dry ingredients together in a large mixing bowl.
  2. Combine the eggs, xylitol and yoghurt in the bow of an electric mixer and beat together.
  3. Add the dry ingredients to the wet ingredients and mix through.
  4. Melt butter in a non-stick frying pan over medium heat and drop large tablespoons of the batter in a pan.
  5. Fry until bubbles appear on the surface and turn over. Fry for another few minutes until golden and cooked.
  6. Serve with extra yoghurt and fresh berries.
