Yummy Bites

  • 1 cup lightly ground gluten-free rolled oats
    ¼ cup ground flax meal
  • ½ tsp ground cinnamon
  • Pinch of sea salt
  • ½ tsp nutmeg
  • ½ cup dairy-free dark chocolate chips
  • 60g mini freeze-dried mango chips
  • ½ cup currants
  • ½ cup butter
  • ¼ cup honey
  • 1 tbsp vanilla essence
  1. Line a baking tray with grease proof paper.
  2. In a medium size bowl, lightly stir together the oats, flax meal, cinnamon, salt and nutmeg.
  3. Add the diary free dark chocolate chips and dried fruit to the mixture.
  4. Add the butter, honey and vanilla essence.
  5. Mix together carefully and slowly.
  6. If the batter is too dry, add a little honey. If the batter is too wet, add oats.
  7. Form the batter into bite-size balls.
  8. Add to the prepared baking tray and freeze.
