Bacon & Pineapple Bites


  • 1/4 fresh pineapple, skin removed
  • 200g back bacon


  1. Preheat the oven to 220°C. Line a baking tray with baking paper.
  2. Slice the pineapple into 2.5cm x 2.5cm cubes. Wrap a slice of bacon around each pineapple cube.
  3. Arrange the bacon-wrapped pineapple pieces on the baking tray with the bacon-flap side down.
  4. Bake for 30 minutes, or until the bacon is perfectly browned.
  5. Remove the bacon- pineapple bites from the pan and allow to cool slightly on a plate lined with a paper towel so that the bacon crisps and the drippings dry.
  6. Insert a toothpick into each bite and serve warm with crème fraiche or avo dipping sauce.
