Preheat the oven to 220°C. Line a baking tray with baking paper.
Slice the pineapple into 2.5cm x 2.5cm cubes. Wrap a slice of bacon around each pineapple cube.
Arrange the bacon-wrapped pineapple pieces on the baking tray with the bacon-flap side down.
Bake for 30 minutes, or until the bacon is perfectly browned.
Remove the bacon- pineapple bites from the pan and allow to cool slightly on a plate lined with a paper towel so that the bacon crisps and the drippings dry.
Insert a toothpick into each bite and serve warm with crème fraiche or avo dipping sauce.
