Banana Bread Muffins

Ingredients

  • 2 ripe bananas
  • 250g pumpkin steamed
  • ½ cup coconut flour
  • ¼ cup chia seeds
  • 4 fresh prunes (or dried prunes soaked in warm water), pitted
  • 6 extra-large eggs
  • 2 drops vanilla extract
  • ¼ cup coconut oil melted
  • ½ tsp ground cinnamon
  • 2 tsp baking powder
  • 2 tbsp butter, softened

Method

  1. Preheat the oven to 150°C.
  2. Blend all the ingredients together except the butter and leave to stand for 15 minutes while you grease a muffin tin with soft butter.
  3. Fill each muffin cup halfway.
  4. Bake for 20-25 minutes or until the muffins are puffed and golden.
  5. Insert a skewer into a muffin in the middle; it should come out dry.
  6. Remove from the oven and allow to cool before taking the muffins out of the pan.
