Carbonara Zoodles

Ingredients

  • 500g large zucchini, cut into strips
  • 30g butter
  • 250g streaky bacon, cut into cubes
  • 250ml cream
  • 2 eggs
  • 50g grated parmesan
  • Handful of chopped parsley

Method

  1. Bring a large saucepan with salted water to the boil.
  2. Cook the zucchini for 30 seconds in the boiling water.
  3. Drain and set aside.
  4. In a large frying pan heat the butter over medium-high heat. Add the bacon and fry until crispy.
  5. Remove from the pan and set aside
    (keep the bacon fat in the pan).
  6. Combine cream, eggs and parmesan in a bowl or measuring jug.
  7. Season with salt and freshly ground black pepper.
  8. Add to the frying pan and stir over low heat until the sauce starts to thicken.
  9. Toss the zucchini through the sauce and crumble the bacon over, sprinkle over the chopped parsley and serve.

This is our new favourite dinner, especially if I do not have much time to cook in the evening.
