Chocolate Cereal Balls

Ingredients

  • 1 cup raw almonds
  • 2 tbsp coconut flour
  • 2 tbsp coconut oil
  • 1 free-range egg white
  • ¼ tsp sea salt
  • 2 tbsp honey
  • 2 tbsp xylitol

Method

  1. Soak the almonds in water for 10 to 15 minutes to soften them. Drain, then add the nuts to a food processor and grind to form a coarse flour.
  2. Preheat the oven to 175°C and line a baking sheet with baking paper.
  3. Add the ground the almonds along with the remaining ingredients to a bowl and mix using a spoon to form a mixture of dough-like consistency.
  4. Take a pinch of the ‘dough’ and roll into a small ball, ½cm in diameter. Repeat with the remaining cereal ‘dough’, arranging the balls on the lined baking sheet.
  5. Bake for 15 minutes, then remove from the oven and allow the balls to cool on the baking tray.
  6. Serve with milk or full-fat yoghurt or store in an airtight container for up to four days.
