Granola Bars

  • 1 ½ cups apple sauce
  • ½ cup butter, plus extra for greasing
  • ½ cup honey
  • ¼ cup ground flax seed
  • 1 tsp lemon juice
  • 2 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ½ tsp salt
  • 1 tsp vanilla essence
  • 3 cups certified gluten-free rolled oats
  • 1 cup raisins

  1. Preheat the oven to 180°C. Grease a 16 x 16 cm square baking pan with butter.
  2. In a medium saucepan, whisk together all the ingredients, except the oats and raisins, over a medium heat.
  3. Stir regularly until the mixture begins to bubble, then remove from the heat. Combine with the oats and raisins, in a bowl or in the saucepan if large enough.
  4. Spread the mixture into the prepared pan and smooth the top with a spatula.
  5. Bake for 30-35 minutes, until the edges begin to brown.
  6. Remove from the oven and allow to cool completely before cutting into squares or bars using a serrated knife.
  7. Store in a sealed container to prevent drying.
