Homemade Pasta


  • 1 cup stone-ground flour
  • ½ tsp salt
  • 1 free-range egg, slightly beaten
  • 2 tbsp warm water
  • Melted butter, to toss


  1. Sift the flour and salt into a large bowl. Make a well in the middle of the flour mixture, then add the beaten egg and warm water and stir in.
  2. Knead for 5 minutes, adding a little more water if necessary, to form a stiff, smooth dough forms. Cover and set aside to rest for an hour.
  3. Divide the dough into 4 pieces, then roughly flatten each piece. One at a time (keeping the remaining dough covered), feed the dough pieces through a pasta machine to form sheets. 
  4. Cut the sheets of dough into strips of the desired thickness.
  5. Bring a saucepan of salted water to the boil, then drop the dough ribbons into the water and cook until they float to the surface, a few minutes.
  6. Drain, toss with a little melted butter and serve.
