Cauliflower Mash

Ingredients

  • 1 cauliflower
  • 2 tbsp butter
  • 2 tbsp cream (optional)
  • Salt and milled pepper, to taste
  • A pinch of grated nutmeg (optional)

Method

  1. Break the cauliflower into fairly larger florets. Steam until tender.
  2. Mash with a few spoonfuls of butter, not too smoothly for more texture, or whisk, adding a little cream, until very smooth.
  3. Season, add a pinch of nutmeg, if using, and serve.

Serves 4-6

Mixed Vegetable Mash

Ingredients

  • 250g celeriac, peeled and cubed
  • 250g parsnips, peeled and cubed
  • 250g cauliflower mash
  • 50g butter
  • ½ cup cream
  • Salt and milled pepper, to taste
  • A pinch of grated nutmeg (optional)

Method

  1. Simmer the vegetables in a saucepan of lightly salted, boiling water for 20 minutes, or until tender. 
  2. Drain and return the saucepan to the hob to dry off.
  3. Stir in the butter and cream and heat through.
  4. Mash roughly using a potato masher, or blitz with a stick blender for a smoother finish.
  5. Season and, if you like, add a little grated nutmeg to finish.
