Vanilla Truffles


  • 1 cup macadamia nuts
  • ¼ cup cocoa butter
  • ¼ organic coconut oil or melted butter
  • 1 tbsp xylitol
  • 2 tsp vanilla extract or seeds from 1 vanilla pod


  1. Place the macadamia nuts in a blender and pulse until smooth.
  2. Mix with the softened cocoa butter and coconut oil or melted butter.
  3. Add the xylitol and the vanilla extract or seeds, and stir until well blended.
  4. Scoop the mixture (2 tbsp at a time) into mini muffin cases or an ice-cube tray.
  5. Refrigerate for at least 30 minutes, or until the truffles have solidified. Store chilled.
